Chocolate Peppermint Whoopie Pies

Makes 12 whoopie pies

Hip Hip Hooray…these whoopie pies are guaranteed to make your holidays jolly and bright!

INGREDIENTS

No-Stick Cooking Spray

1 (7 oz.) package HUNGRY JACK EASY PACK FUNFETTI Holiday Buttermilk Pancake Mix

1/4 cup sugar

1/2 cup cocoa powder

1 large egg

1/2 cup milk

1/4 cup pure vegetable oil

1/2 cup butter, softened

1 cup marshmallow creme

1 cup powdered sugar

1/16 teaspoons peppermint extract

Holiday-colored sprinkles, if desired

DIRECTIONS

1.Heat oven to 375 degrees. Coat baking sheet with no-stick cooking spray.

2.Whisk pancake mix, sugar, cocoa powder, egg, milk, and oil in a medium bowl until smooth. Drop batter by rounded tablespoonfuls, 2 inches apart, onto prepared baking sheet. Top with additional holiday sprinkles, if desired. Bake 6 to 8 minutes, until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.

3.Beat butter, marshmallow creme, powdered sugar, and peppermint extract in medium bowl with electric mixer on medium speed, until light and fluffy, about 2 minutes. Spread 1 tablespoon filling on flat side of 12 pies. Top with remaining pies, rounded side up, to form whoopie pies.
