Makes 30 cookies
These easy cookies are made using pancake mix. You’ll love them so much, make them for other holidays by just swapping out the colors of the candy-coated chocolate pieces.
INGREDIENTS
No-Stick Cooking Spray
1/4 cup Butter Flavor All-Vegetable Shortening
1/2 cup firmly packed dark brown sugar
1 large egg
2 teaspoons vanilla extract
1 (7 oz.) package Hungry Jack® Easy Pack™ Funfetti® Holiday Buttermilk Pancake Mix
3/4 cup red and green candy-coated chocolate pieces
DIRECTIONS
1.Heat oven to 350 degrees. Coat baking sheet with no-stick cooking spray.
2.Beat shortening and brown sugar in medium bowl with electric mixer on medium speed until blended. Add egg and vanilla. Beat until smooth. Blend in pancake mix. Stir in candy pieces. Drop by tablespoonfuls onto prepared baking sheet.
3.Bake 6 to 8 minutes, or until edges are lightly browned. Cool on baking sheet 1 minute. Remove to wire rack to cool completely.
