Blueberry Pie Cupcakes

Makes 24 cupcakes

Blueberry pie in the summer is a tasty treat…especially when they come in single-service cupcakes.

INGREDIENTS

1 box PILLSBURY MOIST SUPREME Yellow Cake Mix

Additional ingredients to prepare cake mix per package instructions

2 tubs PILLSBURY Creamy Supreme® White Frosting,

Blue, purple, yellow and brown gel food color

Blue mini M&M’s

DIRECTIONS

1.Prepare cupcakes according to box instructions. Let cool completely.

2.Take one tub of frosting and color it with blue and purple coloring. Remove a third of the second tub of frosting and set aside. To the remaining two thirds, add yellow and brown food coloring to get a nice tan color.

3.Spread the purple icing onto each cupcake, making sure it is level.

4.Place blue mini M&M’s close together, with the “m” facing up on a plate.

5.Place the iced cupcake upside down onto the plate of M&M’s so they stick to the frosting; fill in any gaps with extra candy.

6.Place a small basketweave tip into a piping bag. Fill the bag with half of the tan frosting and pipe horizontal and vertical lines onto the top of the cupcake over the M&M’s, leaving space between the lines.

7.Place a petal tip into a piping bag and fill with remaining tan frosting. Pipe a ruffle edge to resemble a crust.
