Peanut Butter Cookie Cheesecake Bars

Makes 16 bars

Great for an after-school snack, lunchbox treat, or just for a sweet and satisfying dessert.

INGREDIENTS

FOR THE PEANUT BUTTER COOKIES

1 package PILLSBURY Peanut Butter Cookie Mix

3 tablespoons vegetable oil

1 tablespoon water

1 egg

FOR THE CHEESECAKE FILLING

8 ounces cream cheese, softened

1/3 cup sugar

1/2 teaspoon vanilla extract

1 egg

1/2 teaspoon salt

1 tablespoon sour

Peanut butter chips, for garnish

DIRECTIONS

1.Preheat oven to 350 degrees. Line an 8 x 8-inch baking pan with parchment.

2.FOR THE COOKIES: MIX PILLSBURY Peanut Butter Cookie Mix, vegetable oil, water, and egg in a bowl until well-combined. Press two-thirds of the dough into the pan in an even layer and reserve the rest of the dough.

3.FOR THE CHEESECAKE: Beat cream cheese, sugar, and egg with a hand mixer until smooth. Add in vanilla, salt, and flour and beat again. Pour cheesecake filling over the cookie layer and smooth with a spatula.

4.Sprinkle the reserved cookie dough on top of the cheesecake filling. Scatter peanut butter chips on top.

5.Bake for 30 minutes, until the top is golden brown. Remove from oven and let cool completely. Refrigerate for 2 to 3 hours (until chilled) before slicing and serving.
