Sure, these pancakes are perfect for breakfast, but with the roasted pairs and ice cream on top, we like to think of them as a great choice for dessert, too. Either way, they make a tasty addition to your holiday celebrations.

INGREDIENTS

ROASTED PEARS

2 tablespoons butter

2 Bosc pears, peeled, cored and cut into 8 wedges

3 tablespoons dark brown sugar

 

SILVER DOLLAR PANCAKES

1 cup HUNGRY JACK Complete Wheat Blends Pancake Mix

1/4 teaspoon cinnamon

3/4 cup water

No-stick cooking spray

 

MAPLE-HONEY SYRUP

2/3 cup HUNGRY JACK Butter Flavored Syrup

1/4 cup honey

1/4 teaspoon cinnamon

1/2 cup chopped pecans

1 quart French vanilla ice cream

 

DIRECTIONS

1.FOR ROASTED PEARS: Heat oven to 425 degrees. Melt butter in 9” pie plate by microwaving for up to 1 minute on HIGH. Add pears, stirring until completely coated with butter. Sprinkle with brown sugar. Bake 25 to 30 minutes, stirring occasionally, until fork tender and light golden brown.

2.FOR SILVER DOLLAR PANCAKES: Combine pancake mix, cinnamon, and water in bowl. Stir just until large lumps disappear. Heat skillet over medium-high heat or electric griddle to 375 degrees. Spray cooking surface with no-stick cooking spray. Pour 1 tablespoon batter for each pancake onto hot griddle. Cook about 1 minute per side. Repeat process until all batter is used.

3.FOR MAPLE-HONEY SYRUP: Combine syrup, honey, cinnamon, and pecans in a microwave-safe container. Microwave on HIGH for 1 to 2 minutes.

4.Arrange 5 or 6 pancakes in center of each plate. Arrange 4 pear slices over center of pancakes. Top with 3 small scoops of ice cream. Drizzle with 2 to 3 tablespoons of syrup. Serve immediately.
