Rock around the Christmas tree cookies then eat them.

 

YOU’LL NEED 

CHOCOLATE COOKIES
1 cup butter (2 sticks), room temperature
1 cup sugar
1 egg
1 tsp vanilla extract
2 cups all-purpose flour
3/4 cup HERSHEY’S Cocoa
1 – 1/2 teaspoons baking powder
1 teaspoon salt

FILLING
1/2 cup unsalted butter (1 stick)
2 tablespoon heavy whipping cream
1 teaspoon vanilla extract
Pinch of salt
3 cups powdered sugar
HERSHEY’S KISSES Brand Candy Cane Mint Candies
HERSHEY’S Milk Chocolate Chips
Additional
powdered sugar

DIRECTIONS

1.For the cookies: Combine the butter and sugar in a large mixing bowl and beat on medium speed until light and fluffy.

2.Add the egg and vanilla; beat until well incorporated.

3.In a small bowl whisk together the flour, cocoa, baking powder and salt.

4.Gradually add the dry mixture to the creamed mixture, beating on lowest speed. Continue to mix on the lowest setting until the dry ingredients are just incorporated.

5.Divide the dough in half and shape into two discs. Wrap in plastic wrap and refrigerate for 1 hour.

6.When the dough is chilled, preheat the oven to 350°F. Line a baking sheet with parchment paper or a baking mat. Set aside.

7.Roll one portion of the dough to 1/4 inch thickness.

8.Use a Christmas tree cookie cutter to cut out cookies.

9.Transfer them to the prepared baking sheet.

10.Bake for 10 minutes.

11.After the cookies come out of the oven, place the KISSES Candy and chocolate chips on half of the cookies as decorations when the cookies are warm, not hot, so as to have the chocolate stick on the cookies, but not melt.

12.Transfer the cookies to a cooling rack to cool completely.

13.Repeat steps 7 through 12 with second portion of dough.

For the filling:
Combine the butter, heavy whipping cream, vanilla extract and salt and beat until combined.

Add the powdered sugar 1/2 cup at a time until the filling comes together. It should be a little stiffer than cupcake frosting.

Assemble the cookies:
Transfer the filling to a piping bag and pipe the filling onto the half of the cookies that are not decorated.

Top with the decorated cookies to form the cookie sandwiches.
