This is such a fun and festive cake to serve at any birthday celebration, and best of all…it’s gluten-free! Cake, Ice cream, and sprinkles all mixed into one fantastic dessert!
INGREDIENTS
1 (1.5 qt.) container vanilla or chocolate ice cream, softened
1 package PILLSBURY FUNFETTI Gluten Free Cake Mix
Additional ingredients to prepare cake mix per package instructions
1 cup cold heavy cream
1 container PILLSBURY FUNFETTI Vanilla Flavored Frosting
DIRECTIONS
1.Line 8” round baking pan with plastic wrap. Scoop ice cream into prepared pan. Cover with plastic wrap. Press to form an even layer. Freeze 2 hours or until firm.
2.Prepare cake mix according to package instructions using water, oil, and eggs to make 2 (9”) cake layers. Cool according to package instructions.
3.Place 1 cake layer on freezer-safe platter, rounded side down. Unwrap ice cream layer; place on top of cake layer. Top with remaining cake layer. Press top of cake firmly to join layers. Freeze 3 hours or until firm.
4.Beat cream in large bowl with mixer on high speed until stiff peaks form. Blend in frosting. Working quickly, frost cake. Freeze 2 hours or overnight. Let stand at room temperature 15 minutes before serving.
