This fun and delicious Rainbow Cookie Sandwiches recipe is the perfect activity for a night in with the kids, or a great whimsical platter for your next celebration!

 

INGREDIENTS

Sweet Tooth Fairy Bright Confetti Sugar Cookie Mix

Food gel, Violet, Sky Blue, Leaf Green

Toothpicks

Wax paper

Food-safe scissors

Rolling pin

Circle cookie cutter

Favorite recipe or store-bought buttercream frosting

 

DIRECTIONS

1.Follow the instructions on the back of the sugar cookie mix, then divide it into four sections.

2.Add a little Violet gel to one dough section, Sky Blue gel to one, and Leaf Green to a third section. Leave the fourth section natural. TIP: If desired, choose three coordinating gels you like better for your cookie sandwiches.

3.Knead each dough section separately until gel is evenly distributed. After you’ve achieved the shades you like, set your dough sections aside. TIP: Wear gloves if you don’t want to stain your hands.

4.Prepare your counter by laying out a large sheet of wax paper.

5.Begin ripping quarter-sized pieces from your first dough section and place them strategically around your wax paper. Do the same with the remaining three dough sections until you’ve created a rectangle of dough and you can no longer see any gaps between dough pieces. Smoosh the dough together if needed. Use a rolling pin to make sure your dough has an even thickness across the rectangle. TIP: If you would like to create even more of a tie dye effect in your cookies, use a toothpick and swirl with dough around a bit! Just make sure to roll it out flat again when you are done.

6.Use one of the cutters from the nested set to cut sugar cookie circles, all the same size, and place them on your pan.

7.Bake at 350 degrees for 8 to 10 minutes. Set aside to cool.

8.Now, pair your cookies in similar sizes for best sandwich results.

9.Prepare your piping bag with a round icing tip and buttercream frosting.

10.Pipe a spiral on the inside of one cookie from each pairing, starting on the outside and working your way to the middle. Carefully place the second cookie in each pairing on top of the piped buttercream frosting to create the cutest sugar cookie sandwiches.
