Makes 1 cheesecake
This Pumpkin Cinnamon Chip Cheesecake is a sweet treat that’s topped with a delightful chocolate drizzle.
CHEESECAKE INGREDIENTS
3 packages cream cheese (8oz. each), softened
1 cup granulated sugar
3 tablespoons all-purpose flour
1 2/3 cups HERSHEY’S Cinnamon Chips (10oz. pkg.)
2 tablespoons milk
4 eggs
1 teaspoon pumpkin pie spice
1 cup canned pumpkin
CHOCOLATE DRIZZLE INGREDIENTS
1/4 CUP Hershey’s Milk Chocolate Chips
1 1/2 teaspoons shortening (do not use butter, margarine, spread, or oil)
GRAHAM CRACKER CRUST INGREDIENTS
1 cup graham cracker crumbs
3 tablespoons sugar
3 tablespoons melted butter
DIRECTIONS FOR GRAHAM CRACKER CRUST
1.Set oven to 350 degrees.
2.In a small bowl, stir together 1 cup graham cracker crumbs, 3 tablespoons sugar, and 3 tablespoons melted butter.
3.Press mixture onto bottom of 9-inch springform pan. Bake 10 minutes; set aside after taken out of oven.
FOR CHEESECAKE
4.Beat cream cheese, sugar, flour, and pumpkin pie spice in large bowl on medium speed of mixer until smooth. Place cinnamon chips and milk in small microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred.
5.Blend cinnamon mixture and pumpkin into cream cheese mixture. Add eggs, one at a time, mixing well after each addition. Pour mixture into prepared crust.
6.Bake 60 to 65 minutes or until center is almost set. Remove from oven to wire rack. With knife, immediately loosen cake from side of pan. Cool completely; remove side of pan. Refrigerate for about 5 hours before serving.
FOR CHOCOLATE DRIZZLE
7.Place 1/4 cup HERSHEY’S Milk Chocolate Chips and 1 1/2 teaspoons shortening in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir. If necessary, microwave at MEDIUM an additional 10 seconds at a time, stirring after each heating, until chocolate is melted and mixture is smooth when stirred.
6.Drizzle over top of cheesecake; cover. Refrigerate leftover cheesecake.
