This showstopper Mirror Glaze Snowflake Cake will add elegance and magic to your holiday party.

INGREDIENTS

Favorite cake mix or recipe

FOR THE GLAZE

1 cup glucose

2 cups (10 oz.) Candy Melts Candy, Bright White

3 envelopes (3/4 oz.) unflavored gelatin

Cold water (1/2 cup plus 1 tablespoon and another 2/3 cup)

1 1/2 cups sugar

2/3 cups (7 oz.) sweetened condensed milk

Wilton Sprinkles Nonpareils Pouch, White

Wilton Sprinkles Sugar Pouch, White

Wilton Sprinkles Jimmies Pouch, White

 

DIRECTIONS

1.Melt three 4 oz. bright white Candy Melts candy in decorating bag following package directions.

2.Tape waxed paper to cake board. 

3.Cut small opening in decorating bag and pipe snowflakes, ranging in size from 1″ to 3″. Make extras to allow for breakage. Chill until set, about 15 to 20 minutes. 

4.Bake 8″ x 2″ cake following recipe directions. Cool completely and place on cake board. 

5.Use spatula and 1 1/2 cups icing to ice cake smooth. Chill until ready to pour glaze. 

6.For the glaze, chop Candy Melts candy and set aside. 

7.In a large measuring cup, stir together gelatin and 1/2 cup plus 1 tablespoon cold water. Let sit for 5 minutes to bloom. 

8.Add sweetened condensed milk and chopped Candy Melts candy. 

9.In a pot, combine glucose, sugar, and 2/3 cup cold water. Cook over medium heat, stirring until sugar dissolves. Continue cooking until mixture reaches 217 degrees F. 

10.Pour hot sugar mixture over Candy Melts mixture. Stir to combine, and then use an immersion blender or food processor to emulsify. 

11.Strain mixture through mesh strainer to remove any air bubbles. 

12.Divide mixture and tint 1 cup blue; do not mix color in completely. 

13.Position cake on a cooling grid set over a sheet pan. 

14.Add 2 cups white glaze to blue glaze. Do not mix. Pour colored mixtures over the top and down the sides of the cake, swirling together, covering entire cake. Refrigerate cake until set, approximately 15 minutes. Gently remove from grid and place on serving plate. 

15.Make small marks in cake top with a knife to insert snowflakes to stand upright. Position candy snowflakes on cake top. 

16.Add sprinkles.
