Makes 25 cookies

 

These cookies have the perfect lemon flavor to brighten any celebration. Best of all, they are as tasty as they are pretty.

INGREDIENTS

LEMON SHORTBREAD COOKIES

1 cup (2 sticks) butter, softened

3/4 cup confectioners’ sugar

1 tablespoon MCCORMICK Pure Lemon Extract

2 cups flour

 

GLAZE

1 package (12 ounces) white chocolate chips

1/2 teaspoon Sunflower color from MCCORMICK Nature’s Inspiration Food Colors

 

DIRECTIONS

1.Preheat oven to 300 degrees. For the Cookies, beat butter and sugar in a large bowl with electric mixer on high speed, until light and fluffy. Add lemon extract; beat on medium speed until blended. Gradually beat in flour on low speed until well mixed. Divide dough in half.

2.Roll out one half of the dough on lightly floured surface to 1/4-inch thickness. Cut into shapes using favorite cookie cutters. Place on ungreased baking sheets. Repeat, rerolling any dough scraps into remaining half of dough.

3.Bake 15 to 18 minutes, or until edges are lightly browned. Remove to wire racks; cool completely.

4.For the Glaze, melt chocolate chips as directed on package. Stir in Sunflower color. To glaze cookies, hold a cookie by its edge and dip the top into the glaze. (Or spoon the glaze onto cookies using a teaspoon.) Place glazed cookies on wire rack to dry. If desired, sprinkle with Colored Decorating Sugar before glaze hardens. (See recipe below.)

 

COLORED DECORATING SUGAR

INGREDIENTS

1 cup granulated sugar

1 teaspoon water

MCCORMICK Nature’s Inspiration Food Colors

 

DIRECTIONS

1.Place sugar in large resealable plastic bag. Select your desired Sugar Color in the COLOR TIPS section below, and add the designated amount of the Nature’s Inspiration Food Colors with the sugar. Seal bag. Knead sugar to distribute the color. Add water; seal bag and knead again, until the color is evenly distributed.

2.Spread the different colors of sugar on a large rimmed baking sheet. Let stand 25 to 30 minutes, or until sugar is dried.

3. Sprinkle the desired color of sugar onto cookies or cakes before baking, or sprinkle onto cooled, freshly iced or baked cookies or cakes. Store any remaining colored sugar in airtight container.

 

COLOR TIPS

Pink: Add 1/4 teaspoon Berry color from MCCORMICK Nature’s Inspiration Assorted Food Colors.

Sunflower: Add 1/4 teaspoon Sunflower color from MCCORMICK Nature’s Inspiration Assorted Food Colors.

Baby Blue: Add 1/4 teaspoon Sky Blue color from MCCORMICK Nature’s Inspiration Assorted Food Colors.

Pretty Purple: Add 1/4 teaspoon each Sky Blue color and Berry color from MCCORMICK Nature’s Inspiration Assorted Food Colors.

Grass Green: Add 1/4 teaspoon each Sky Blue color and Sunflower color from MCCORMICK Nature’s Inspiration Assorted Food Colors.

 

TIP: If chocolate starts to harden, microwave an additional 10 to 15 seconds, stirring just until smooth.


GET CREATIVE WITH PRETTY COLORS

Try a variety of different flavors to give your cookies a colorful presentation!

FOR ORANGE SHORTBREAD COOKIES

Use 1 tablespoon MCCORMICK Pure Orange Extract in place of the lemon extract in the cookies. Omit adding color to the glaze. Simply glaze cookies with melted white chocolate glaze and sprinkle with Sunflower Colored Decorating Sugar.

FOR LIME SHORTBREAD COOKIES

Use 1 teaspoon MCCORMICK Pure Lime Extract in place of the lemon extract in the cookies. Use 1 teaspoon Sky Blue color and 1/2 teaspoon Sunflower color from MCCORMICK Nature’s Inspiration Assorted Food Colors in place of the 1 teaspoon Sunflower in the glaze. If desired, sprinkle cookies with Grass Green or choice of other assorted Colored Decorating Sugar.
