Favorite cake mix or recipe (for two 6” layers)

White Ganache (recipe in directions)

 

DIRECTIONS

1.Bake cake according to directions. Cool completely. Level and fill for a 6” high cake.

2.Divide icing into six 1-cup portions and tint rose, orange, yellow, green, blue and purple. Place icings separately in disposable decorating bags. Cut off 1 1/4” at end of bags.

TIP: Combine Lemon Yellow and Golden Yellow for yellow shown. Combine Violet and Rose for purple shown.

3.Place cake on board and position on turntable. Beginning at the bottom border, pipe bands of color, approximately 1″ high, in this order: rose, orange, yellow, green, blue, and purple. Reserve remaining icing.

4.Use icing smoother, and while turning turntable, smoothing colors at one time. Use angled spatula to smooth cake top.

5.Prepare white ganache recipe. Chop white CANDY MELTS by hand or with a food processor. Heat whipping cream in saucepan, just to boiling point. Do not boil. Remove from heat and add chopped CANDY MELTS, then stir until smooth and glossy. Let cool.

6.Pour cooled ganache into a disposable decorating bag, and cut 3/4” off the end. Start at center of cake top, move turntable while squeezing bag, until you reach top edge of cake. Allow to flow slightly off edge. Let ganache set until firm to touch, 15 to 20 minutes.

7.Fit six decorating bags with tip 1M. Separately fill with each icing color. Divide cake top into sixths and lightly mark with toothpick. Pipe tip 1M rosettes in each color at marks.
