Makes 2 cake rolls
Impress your guests during the holidays with this showstopper FUNFETTI Holiday Cake Roll.
INGREDIENTS
1 package PILLSBURY FUNFETTI Holiday Cake Mix
3 tubs PILLSBURY FUNFETTI Holiday Red Vanilla Frosting (1.5 per roll)
6 large eggs
1/4 cup oil
1/4 cup water
OPTIONAL INGREDIENTS
1 tub FUNFETTI Vanilla Frosting
Candied Cranberries and Rosemary Sprigs
DIRECTIONS
1.Beat eggs on medium for 3 minutes until light and airy. Add mix, oil and water, and mix on low for 2 minutes. Pour 1/2 mixture into a two lined 10 x 15-inch baking sheets. Bake in at 325 degrees for 10 to 12 minutes.
2.Turn cake upside down onto a clean towel that has been sprinkled with powdered sugar (prevents the cake from sticking). While hot, roll cake with a towel. Repeat with other cake. Allow to cool completely (about 1 hour).
3.Unroll and spread 3/4 container of frosting onto each cake. Reroll without towel. Place cakes over a cooling rack with a baking sheet underneath. Microwave 1 container of red frosting for 30 to 40 seconds until melted for each roll. Pour 3/4 frosting over each roll until completely covered. Top with holiday sprinkles. Fit a piping bag with a star piping tip and fill with vanilla frosting. Decorate with candied cranberries and rosemary. Refrigerate for 1 hour until icing is completely set. Cut and serve!
