Makes 18
Adding applesauce makes muffins extra soft and moist and the butterscotch chips and a butterscotch streusel gives them a warm sweetness.
INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 egg, slightly beaten
1/2 cup milk
1/4 cup vegetable oil
3/4 cup HERSHEY’S Butterscotch Chips
3/4 cup chunky applesauce
1/2 cup chopped nuts (optional)
BUTTERSCOTCH STREUSEL
1/4 cup all-purpose flour
1/4 cup packed light brown sugar
2 tablespoons butter or margarine, softened
1/4 cup HERSHEY’S Butterscotch Chips
1/4 teaspoon shortening (do NOT use butter, margarine, spread or oil)
DIRECTIONS
1.Prepare Butterscotch Streusel; set aside. Heat oven to 350 degrees. Line muffin cups (2-1/2 inches in diameter) with paper bake cups.
2.Stir together flour, sugar, baking powder, salt, and cinnamon in large bowl. Add egg, milk, and oil; stir just until blended. Stir in butterscotch chips, applesauce, and nuts, if desired. Fill muffin cups 2/3 full with batter. Sprinkle 1 tablespoon streusel mixture on top of each muffin.
3.Bake 20 to 25 minutes, or until wooden pick inserted in center of muffin comes out clean. Cool in pan 10 minutes; remove to wire rack.
BUTTERSCOTCH STREUSEL
Combine 1/4 cup all-purpose flour, 1/4 cup packed light brown sugar, and 2 tablespoons softened butter or margarine in small bowl; mix with fork until crumbly. Stir in 1/4 cup HERSHEY’S Butterscotch Chips.
