From READY SET EAT

Featured Brand: REDDI-WIP

Makes 12 servings

This watermelon granita ice dessert is easy, delicious, and the perfect way to cool off on a hot summer afternoon.

INGREDIENTS

4 cups cubed, seedless watermelon, about 2 pounds, frozen
2 tablespoons honey or agave
1/4 cup lime juice
REDDI-WIP Non-Dairy Whipped Topping made with Coconut Milk
Fresh mint leaves, optional

DIRECTIONS

1.Add frozen watermelon, sugar, and lime juice to a high-powered blender container and blend until liquified.

2.Pour into a 9 x 13-inch glass baking pan and freeze for about an hour. Scrape the mixture with a fork to break up the ice crystals and return to the freezer. Repeat the scraping every 30 minutes for another 2 hours.

3.Once the mixture is a fluffy, shaved ice, scoop into chilled serving bowls and top with REDDI-WIP. Garnish watermelon granita with a mint sprig and serve immediately.
