Shamrock Pretzel Cupcakes

Makes 24 cupcakes

Celebrate St. Patrick’s Day with the easy-to-make shamrock cupcake.

INGREDIENTS

1 box PILLSBURY MOIST SUPREME White Cake Mix, or your favorite variety

Green food coloring

Additional ingredients to prepare cake mix per package instructions

1 tub PILLSBURY CREAMY SUPREME White Frosting, or your favorite variety

1 package dark green candy melts

2 tbsp shortening

Cake pop sticks

1 package mini pretzels

DIRECTIONS

1.Prepare cake mix according to package instructions using water, oil, and egg whites, adding green food coloring to reach desired color. Cool completely.

2.Melt dark green candy melts in the microwave according to package instructions. Arrange three pretzels and the cake pop stick to form a shamrock. Use a small amount of candy melts to attach together; set aside to let cool. Repeat, re-melting the candy melts, as necessary, throughout the process.

3.When the pretzels are secured on the sticks, add 2 tablespoons shortening to the remaining candy melts and re-melt in the microwave. Spoon candy melt mixture over exposed pretzels, avoiding the already set candy (this could cause it to melt and fall apart). Let excess drip, then place on parchment paper to set. Repeat with remaining shamrocks.

4.Frost cupcakes however you like (1M piping tip used in photo), then insert shamrock topper.
