Spelt Apple Cake

A delicious dessert for a special celebration or holiday, this Spelt Apple Cake features a quick and easy recipe.

INGREDIENTS

125 grams plain yogurt

225 grams ARROWHEAD MILLS Organic Spelt Flour

150 grams coconut sugar substitute for sugar of choice

75 grams olive oil

3 large eggs

8 grams baking powder

1 tablespoon ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon fine kosher salt

3 medium apples diced

DIRECTIONS

1.Preheat oven to 350 degrees.

2.Butter the cake mold and sprinkle it with sugar.

3.Mix yogurt, eggs, sugar, olive oil, and vanilla until well combined.

4.In a separate bowl, mix together flour, salt, and baking powder.

5.Combine dry mixture to wet and stir until just combined.

6.Fold in apples and pour the mixture into the mold.

7.Bake for 50 to 60 minutes. To check doneness, insert a toothpick into the center of your cake. The toothpick should come out clean.

8.Allow the cake to cool for 10 minutes before removing it from the mold.
